Dr. Jenny Weissbrodt studied food technology at the University of Bonn. She did her PhD in the field of microencapsulation of food ingredients, food additives and bioactive components. Since 1999 Jenny’s main focus area is on drying technologies, especially spray drying. After several years as an assistant professor at the University of Bonn, Jenny took the opportunity to work in the flavor industry at the SYMRISE AG in Holzminden. Symrise is a globally recognized leading provider of fragrances, flavors and active ingredients as well as aroma chemicals for the perfume, cosmetic, pharmaceutical, food and beverage industries. In 2011 she took over the leadership of the technology scouting and development group within the flavor division. Her tasks include the search for new technologies and materials for flavor encapsulation, improvement of existing technologies and development of new products and processes. Focus technologies are spray drying, fluidized bed spray drying, fluidized bed granulation and coating, drip casting, hot melt extrusion, coacervation and roller compaction. Additionally, Jenny is heading the laboratory for physical analysis,and working on powder and emulsion characterization, product improvement and systematic safety reviews of products and processes.
